Steak Preparation

    Preheat your grill or skillet over high heat.

    Crush the black peppercorns and mix with kosher salt. Rub this mixture all over the NY strip steak.

    Drizzle olive oil on the steak and place it on the grill or skillet. Cook for 4-5 minutes on each side for medium-rare, adjusting time to your preferred doneness.

    In a saucepan, combine beef stock, red wine, and shallots. Bring to a boil and simmer until reduced by half.
