    Prepare the Grits

    In a medium pot, bring 4 cups of water to a boil. Add a pinch of salt. Slowly stir in 1 cup of Adluh grits, reduce the heat, and simmer for about 20-25 minutes until thickened, stirring occasionally. Once cooked, stir in butter and shredded cheddar cheese until melted and creamy.

    Cook the Bacon

    In a large skillet, cook 4 slices of Benton’s bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.

    Sauté the Vegetables

    In the same skillet with the bacon drippings, add chopped cherry tomatoes, spinach, and minced serrano peppers. Sauté for 3-4 minutes until the spinach is wilted and the tomatoes are soft.

    Cook the Shrimp

    Add the tail-on shrimp to the skillet with the vegetables. Season with salt and black pepper to taste. Cook for about 3-4 minutes, or until the shrimp turn pink and opaque.

    Prepare the Cream Sauce

    In a small saucepan, heat 1 cup of heavy cream over medium heat. Crush the whole peppercorns and add them to the cream. Simmer for about 5 minutes until slightly thickened. Season with salt to taste.

    Assemble the Dish

    To serve, spoon the creamy cheddar grits onto a plate, top with the shrimp and vegetable mixture, and drizzle with peppercorn cream sauce. Crumble the crispy bacon on top.
