Prepare the Vanilla Cream
In a saucepan, combine the heavy cream and the vanilla bean (split and scraped). Heat over medium heat until steaming, but do not bring to a boil. Remove from heat and let steep for 15 minutes.

Prepare the Egg Mixture
In a mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and slightly thickened.

Combine Mixtures
Gradually pour the warm vanilla cream into the egg mixture while whisking continuously to temper the eggs. Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl.

Cool and Chill
Remove the ramekins from the water bath and let them cool at room temperature for 30 minutes. Then refrigerate for at least 2 hours or overnight.

Caramelize the Sugar
Just before serving, sprinkle a thin layer of brown sugar over the tops of the chilled crème brûlées. Using a kitchen torch, carefully caramelize the sugar until it is golden and crispy.
