Instructions

  1. 1

    Prepare the Vanilla Cream

In a saucepan, combine the heavy cream and the vanilla bean (split and scraped). Heat over medium heat until steaming, but do not bring to a boil. Remove from heat and let steep for 15 minutes.

  2. 2

    Prepare the Egg Mixture

In a mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and slightly thickened.

  3. 3

    Combine Mixtures

Gradually pour the warm vanilla cream into the egg mixture while whisking continuously to temper the eggs. Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl.

  4. 4

    Bake the Custards

Preheat the oven to 325°F (160°C). Divide the custard mixture among ramekins and place them in a baking dish. Fill the baking dish with hot water halfway up the sides of the ramekins. Bake for 30-35 minutes, or until the custards are set but still slightly jiggly in the center.

  5. 5

    Cool and Chill

Remove the ramekins from the water bath and let them cool at room temperature for 30 minutes. Then refrigerate for at least 2 hours or overnight.

  6. 6

    Caramelize the Sugar

Just before serving, sprinkle a thin layer of brown sugar over the tops of the chilled crème brûlées. Using a kitchen torch, carefully caramelize the sugar until it is golden and crispy.

  7. 7

    Serve

Allow the caramelized tops to cool for a minute before serving. Enjoy your homemade Vanilla Bean Crème Brûlée!
