    Remove the filet mignon from the refrigerator and let it come to room temperature for about 30 minutes. Pat the steaks dry with paper towels.

    Season both sides of the filet mignon generously with salt and black pepper.

    In a large cast-iron skillet, heat the olive oil over medium-high heat until it shimmers.

    Sear the Steaks

    Add the filet mignon to the skillet and sear for about 4 minutes on one side until a golden-brown crust forms.

    Flip the steaks and add butter, garlic, and rosemary to the pan. Cook for an additional 3-4 minutes, basting the steaks with the melted butter.

    Use a meat thermometer to check the internal temperature: 120°F for rare, 130°F for medium-rare, 140°F for medium.
