Prepare the Duck
In a bowl, mix the duck legs with salt, black peppercorns, crushed garlic cloves, thyme, and bay leaves. Cover and refrigerate for at least 24 hours.

Cook the Duck
Preheat the oven to 225°F (107°C). Rinse the duck legs to remove excess salt and pat them dry. Place the duck legs in a baking dish and submerge them in duck fat. Cover the dish tightly with aluminum foil.

Bake
Bake in the preheated oven for 4 to 6 hours, until the duck is tender and the meat easily falls off the bone. Remove from the oven and let it cool in the fat.

Store
Once cooled, you can store the duck confit in the refrigerator in the fat for up to 1 month.
