Preparation

Preparing the Iberian XO Sauce

1. Make the Sauce

In a skillet, heat a small amount of oil over medium heat. Add the minced garlic and shallots and sauté until translucent. Add the dried shrimp, Iberico ham, chili flakes, soy sauce, rice vinegar, and sesame oil. Stir well and let simmer for 10 minutes until thickened. Set aside.

Cooking the Fries

2. Prepare and Fry the Potatoes

Peel and cut the russet potatoes into thin strips. Rinse in cold water and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels, then sprinkle with salt.

Grilling the Steak

3. Grill the Steak

Preheat the grill to medium-high heat. Rub the petit filets with olive oil, salt, and black pepper. Grill for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Let rest for a few minutes before serving.

On a plate, place the grilled steak alongside a generous serving of house-made fries. Drizzle the Iberian XO sauce over the steak and serve hot.
