Iberian XO Sauce
Preparing the Iberian XO Sauce
1. Make the Sauce
In a skillet, heat a small amount of oil over medium heat. Add the minced garlic and shallots and sauté until translucent. Add the dried shrimp, Iberico ham, chili flakes, soy sauce, rice vinegar, and sesame oil. Stir well and let simmer for 10 minutes until thickened. Set aside.
Cooking the Fries
2. Prepare and Fry the Potatoes
Peel and cut the russet potatoes into thin strips. Rinse in cold water and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels, then sprinkle with salt.
