    Prepare the Mixture

    In a large bowl, combine the pork shoulder, chopped bacon, pistachios, chopped apricots, onion, garlic, thyme, beaten egg, salt, black pepper, and cognac (if using). Mix well until all ingredients are evenly distributed.

    Bake the Paté

    Preheat the oven to 350°F (175°C). Transfer the mixture to a loaf pan and press it down firmly. Cover with foil and bake in the preheated oven for 1 hour. Remove the foil and bake for an additional 30 minutes until the top is golden.

    Cool and Serve

    Allow the paté to cool at room temperature, then refrigerate for at least 4 hours or overnight. Serve with sliced sourdough bread and grain mustard.

    Cook the Carrots

    In a saucepan, combine the sliced carrots, orange juice, chili flakes, honey, and salt. Bring to a simmer over medium heat and cook until the carrots are tender and the liquid has reduced, about 15-20 minutes.
