    Prepare the Ingredients

    In a large pot or Dutch oven, heat olive oil over medium heat. Add bacon lardons and cook until crispy. Remove and set aside.

    Sear the Chicken

    In the same pot, add chicken pieces skin-side down and sear until golden brown on all sides. Remove and set aside.

    Sauté the Vegetables

    Add pearl onions, garlic, heirloom carrots, and button mushrooms to the pot. Sauté until softened.

    Combine Ingredients

    Return the chicken and bacon to the pot. Add marble potatoes, red wine, chicken stock, thyme, bay leaves, salt, and pepper. Bring to a boil.

    Simmer

    Reduce heat to low, cover, and simmer for about 1.5 to 2 hours, or until the chicken is tender and cooked through.

    Serve

    Remove bay leaves, adjust seasoning if necessary, and serve hot with grilled country bread.
