    Prepare the Dough

    In a small bowl, combine warm milk and yeast. Let it sit for about 5-10 minutes until frothy. In a large mixing bowl, whisk together flour, sugar, and salt. Create a well in the center and add eggs, yeast mixture, and olive oil. Mix until combined.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Gradually add softened butter, kneading until incorporated and the dough is smooth.

    First Rise

    Place the dough in a lightly greased bowl, cover it with plastic wrap or a damp towel, and let it rise in a warm place for about 1-2 hours or until doubled in size.

    Shape the Dough

    Punch down the risen dough and turn it out onto a floured surface. Divide the dough into equal pieces (about 6-8 for larger rolls). Shape each piece into a ball and place them in a greased loaf pan or on a baking sheet.

    Second Rise

    Cover the shaped dough with a towel and let it rise again for about 1 hour until puffy.

    Bake the Brioche

    Preheat your oven to 375°F (190°C). Bake the brioche for 25-30 minutes or until golden brown. An inserted toothpick should come out clean.

    Cool and Serve

    Remove brioche from the oven and allow to cool in the pan for 10 minutes before transferring to a wire rack. Serve warm with extra virgin olive oil or your favorite spread.
