Chicken Preparation

    Season and Cook Chicken

    Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Sear the chicken breasts for 3-4 minutes per side until golden brown. Transfer to a baking dish and bake for 20-25 minutes until cooked through.

    Sauté Broccoli and Mushrooms

    In the same skillet, add the broccoli florets and sliced mushrooms. Sauté over medium heat for 5-7 minutes until tender. Set aside.

Yeasted Potato Crumbs

    Prepare Potato Mixture

    Boil the diced potatoes in salted water until tender. Drain and mash. In a bowl, combine the mashed potatoes, yeast, flour, melted butter, and warm milk. Mix until a dough forms. Allow it to rise for 30 minutes.

    Bake Potato Crumbs

    Preheat the oven to 350°F (175°C). Spread the dough onto a baking sheet to form a thin layer. Bake for 15-20 minutes until golden and crispy. Once cool, crumble into crumbs.

Sherry Jus

    Make the Sherry Jus

    In a saucepan, combine the Amontillado sherry and chicken stock. Bring to a simmer and reduce by half. Stir in the butter until melted and smooth.

Assembly

    Plate the Dish

    On each plate, place a chicken breast, spoon the sautéed broccoli and mushrooms beside it, sprinkle with yeasted potato crumbs, and drizzle the Amontillado sherry jus over the top.
