Prepare Broth

    Make the Broth

    In a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.

    Add Remaining Broth Ingredients

    Pour in the vegetable broth, soy sauce, and miso paste. Stir until the miso is dissolved. Bring the mixture to a simmer.

Cook Vegetables

    Sauté the Vegetables

    Add julienned carrots, sliced bell pepper, and mushrooms to the pot. Cook for about 5-7 minutes, until the vegetables are tender.

    Add Spinach

    Stir in the fresh spinach and cook for an additional 2 minutes until wilted.

Cook Noodles and Tofu

    Prepare Ramen Noodles

    In a separate pot, cook the ramen noodles according to package instructions. Drain and set aside.

    Cook Tofu

    In a skillet, lightly pan-fry the cubed tofu until golden brown on all sides. Set aside.

Combine and Serve

    Assemble the Ramen

    In bowls, divide the cooked ramen noodles. Ladle the hot vegetable broth and vegetables over the noodles.

    Add Tofu and Garnishes

    Top each bowl with the fried tofu, chopped green onions, sesame seeds, and chili flakes to taste.
