In a mixing bowl, combine the sweet rice flour, sugar, and water. Stir until smooth and well combined.

Transfer the mixture to a microwave-safe dish and cover it with plastic wrap. Microwave on high for 1 minute. Remove and stir. Microwave for an additional 1 minute, stir again, and microwave for another 30 seconds until the dough is sticky and slightly translucent.

Let the mochi dough cool for a few minutes until it is manageable.
Forming Mochi Ice Cream

Scoop the ice cream into small balls (about 1-2 tablespoons each) and place them on a parchment-lined tray. Freeze the ice cream balls for at least 30 minutes to firm up.

On a clean surface, sprinkle cornstarch to prevent sticking. Take a portion of the mochi dough (about 2-3 tablespoons) and flatten it into a circle.

Place a frozen ice cream ball in the center of the flattened mochi dough. Gently fold the edges over the ice cream and pinch to seal. Roll the mochi ball in your hands to smooth it out.
