Cook the Dough
Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir the mixture, cover again, and microwave for another 1 minute. Repeat this process until the dough is slightly translucent, typically about 3-4 minutes total.

Prepare Cornstarch Surface
On a clean surface, sprinkle cornstarch generously to prevent sticking. Transfer the cooked mochi dough onto the cornstarch surface.

Shape the Mochi
Dust your hands with cornstarch and flatten the mochi dough into a rectangle, about 1/2 inch thick. Cut the dough into squares or circles, about 3 inches in size.
Fill with Ice Cream

Scoop Ice Cream
Using a small ice cream scoop or spoon, place a small ball of ice cream (about 1 tablespoon) in the center of each mochi piece.

Wrap the Mochi
Carefully fold the edges of the mochi over the ice cream to seal it completely. Pinch the edges to ensure it is well sealed.

Freeze the Mochi
Place the filled mochi pieces on a parchment-lined tray and freeze for at least 2 hours to firm up.
