Prepare Shrimp

Season the Shrimp
In a bowl, season the peeled and deveined shrimp with salt and black pepper. Set aside to marinate for about 10 minutes.

Mix Batter Ingredients
In a mixing bowl, combine all-purpose flour and cornstarch. In a separate bowl, whisk together cold sparkling water and the egg. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. The batter should be lumpy; avoid overmixing.
Make Dipping Sauce

Combine Sauce Ingredients
In a small bowl, mix together soy sauce, mirin, grated daikon radish, and sesame oil. Stir until well combined and set aside.
Fry Shrimp

Heat Oil
In a deep pot or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dip and Fry
Dip each marinated shrimp into the batter, allowing excess batter to drip off. Carefully place the battered shrimp into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes until golden and crispy.

Drain and Serve
Using a slotted spoon, remove the fried shrimp from the oil and place them on a paper towel-lined plate to drain excess oil. Repeat with remaining shrimp.
