Chashu Pork Preparation

Prepare the Pork Belly
Roll the pork belly tightly and tie it with kitchen twine, securing it in several places.

Braise the Pork
Add the rolled pork belly to the pot and cover. Simmer on low heat for about 2 hours, turning occasionally.

Cool and Slice
Once tender, remove the pork from the liquid and let it cool. Once cool, slice into thin pieces.

Prepare the Broth
In a large pot, combine pork bones and water. Bring to a boil, then reduce to a simmer for about 4 hours.

Flavor the Broth
Strain the broth into another pot. Add soy sauce, miso paste, and salt to taste. Simmer for an additional 30 minutes.
Cooking the Noodles

Cook the Ramen Noodles
In a separate pot, boil water and cook the ramen noodles according to package instructions. Drain and set aside.

In a bowl, place cooked noodles, pour in the hot broth, and top with sliced chashu pork, soft-boiled eggs, sliced green onions, and nori.
