Prepare Rice Pilaf

Cook Rice
Add long-grain rice to the saucepan and stir to coat with the oil and garlic. Cook for about 2 minutes.

Add Broth
Pour in the vegetable broth, add salt and black pepper. Stir well and bring to a boil.

Simmer
Once boiling, reduce heat to low, cover, and let simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
Prepare Stir Fry

Steam Vegetables
While the rice is cooking, steam the broccoli, cauliflower, and carrots until just tender, about 3-5 minutes.

Sauté Onions and Mushrooms
In a large skillet or wok, heat a small amount of sesame oil over medium-high heat. Add sliced onions and mushrooms, and sauté for 3-4 minutes until softened.

Add Stir Fry Spice
In a small bowl, mix soy sauce, sesame oil, minced ginger, and red pepper flakes. Pour this mixture over the vegetables and stir-fry for an additional 2-3 minutes until everything is well-coated and heated through.
Serve

Plate the Dish
Once the rice pilaf is done, fluff it with a fork and serve it as a base on plates. Top with the stir-fried vegetables mixture.
