Toast the Sub Roll
Preheat the oven to 350°F (175°C). Slice the sub roll in half and place it in the oven for about 5 minutes until lightly toasted.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the sliced onions and green peppers, and cook for about 3-4 minutes until they start to soften.

Add Roast Beef
Add the shaved roast beef to the skillet, mixing it with the sautéed vegetables. Cook for about 3-5 minutes until the beef is heated through.
Assembly

Assemble the Sandwich
Place the beef and vegetable mixture onto the bottom half of the toasted sub roll. Layer the American cheese slices on top of the beef.

Melt the Cheese
Return the sandwich to the oven for 2-3 minutes, or until the cheese is melted and bubbly.

Finish Up
Remove from the oven, place the top half of the roll on the sandwich, and cut in half if desired. Serve immediately.
