    Slice the Onions

    Peel the large onions and slice them into 1/4 inch thick rings, separating the rings from each other. Set aside.

    Prepare the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Whisk together until well blended.

    Add Sparkling Water

    Gradually whisk in the cold sparkling water to the dry ingredients until the batter is smooth and slightly thick. Let the batter rest for about 10 minutes.

Frying

    Heat the Oil

    In a large, deep pot or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Batter the Onion Rings

    Dip each onion ring into the prepared batter, ensuring they are fully coated. Allow any excess batter to drip off.

    Fry the Onion Rings

    Carefully add the battered onion rings to the hot oil in batches, making sure not to overcrowd the pan. Fry until golden brown, about 2-4 minutes, turning occasionally for even cooking.

    Drain and Season

    Remove the fried onion rings from the oil using a slotted spoon and transfer them to a paper towel-lined plate to drain excess oil. Season with additional salt to taste while still hot.
