Add Garlic and Deglaze
Add the minced garlic to the pot and cook for an additional 2 minutes. Pour in the dry white wine, scraping the bottom of the pot to deglaze.

Add Broth and Seasonings
Once the wine has reduced by half, add the beef broth, thyme, bay leaf, salt, and black pepper. Bring the mixture to a simmer, then reduce the heat to low and let it simmer for about 30 minutes.

Bake the Croutons
Spread the baguette slices on a baking sheet in a single layer. Bake in the preheated oven for about 10-12 minutes, or until they are golden and crispy.

Serve the Soup
Remove the bay leaf from the soup. Ladle the hot soup into oven-safe crocks, filling them about 3/4 full.

Add Croutons and Cheese
Top each crock with a few croutons and a generous amount of shredded provolone cheese.

Place the crocks under the broiler for 2-3 minutes, or until the cheese is bubbly and golden. Serve immediately.
