Cook the Vegetables
In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, celery, and carrots. Sauté for about 5 minutes until the vegetables are softened.

Add Potatoes and Broth
Add the diced potatoes, fish stock, bay leaves, dried thyme, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce the heat and simmer for about 15 minutes, until the potatoes are tender.

Add Haddock and Milk
Gently stir in the haddock pieces and milk. Continue to simmer for an additional 5-7 minutes, or until the haddock is cooked through and flakes easily.

Final Seasoning
Taste the chowder and adjust the seasoning with additional salt and pepper if needed. Remove the bay leaves before serving.

Ladle the chowder into bowls and garnish with chopped fresh parsley. Serve hot and enjoy!
