Prepare the Pickles
Drain the dill pickle slices and pat them dry with paper towels to remove excess moisture. This will help the batter adhere better.

Make the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, paprika, salt, and black pepper. Whisk together until well combined. Gradually add the buttermilk, whisking until the batter is smooth and free of lumps.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature for frying.

Batter the Pickles
Dip each pickle slice into the batter, ensuring it is fully coated. Allow any excess batter to drip off.

Fry the Pickles
Carefully lower the battered pickle slices into the hot oil, being careful not to overcrowd the pot. Fry in batches for about 3-4 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.
