Fried Haddock

Prepare the Batter
In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until the batter is smooth and well combined.

Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Haddock
Dip each haddock fillet into the batter, allowing excess to drip off. Carefully place the battered fillets into the hot oil and fry for about 4-5 minutes on each side, or until they are golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
On the bottom half of each sandwich bun, place a fried haddock fillet. Top with a slice of American cheese, a leaf of romaine lettuce, and a couple of slices of tomato. Cover with the top half of the bun.

Prepare the Chowder
In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and diced potato, and sauté until softened, about 5 minutes. Stir in the clams, chicken broth, salt, and black pepper. Bring to a boil, then reduce the heat and simmer for about 15 minutes.

Finish the Chowder
Stir in the heavy cream and simmer for an additional 5 minutes until heated through. Adjust seasoning to taste.
