Method

Preparation

  1. 1

    Clean the Clams

Rinse the fresh Maine clams under cold water to remove any sand or debris. Scrub the shells gently with a brush to ensure they are clean. Place the clams in a bowl of cold water and let them soak for about 30 minutes to help them purge any remaining sand.

Cooking

  1. 2

    Prepare the Broth

In a large pot, heat the olive oil over medium heat. Add the minced garlic and finely chopped shallots. Sauté for about 2-3 minutes until they become fragrant and translucent.

  2. 3

    Add Wine and Water

Pour in the white wine and water into the pot. Stir to combine and bring the mixture to a simmer.

  3. 4

    Add Clams

Carefully add the cleaned clams to the pot. Cover the pot with a lid and allow the clams to steam for about 5-7 minutes, or until they have opened up. Discard any clams that do not open.

  4. 5

    Finish the Broth

Once the clams are opened, add the chopped fresh parsley, lemon juice, salt, and black pepper to the pot. Stir gently to combine and allow to cook for an additional 2 minutes.

Serving

  1. 6

    Serve the Clams

Ladle the clams and broth into bowls. Garnish with additional parsley if desired and serve immediately with crusty bread for dipping.
