Prepare the Onions
Peel and thinly slice the yellow onions.

Assemble the Melt
Preheat the oven to 350°F (175°C). On each sub roll, layer the thinly sliced roast beef and the caramelized onions. Top each with 2 slices of provolone cheese.

Melt the Cheese
Place the assembled sub rolls on a baking sheet and bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly. Remove from the oven and season with black pepper.

Serve
Pour the onion soup into small bowls for dipping and serve alongside the steak melts.
