For Deep Fried Scallops

    Prepare the Scallops

    Rinse the scallops under cold water and pat them dry with paper towels. Make sure they are free of any sand or grit.

    Make the Batter

    In a bowl, combine flour, cornstarch, salt, black pepper, and paprika. In another bowl, beat the egg and mix in the milk. Gradually add the dry ingredients to the wet ingredients until well combined.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Scallops

    Dip each scallop into the batter, allowing excess to drip off, then carefully place them into the hot oil. Fry in batches until golden brown, about 2-3 minutes. Remove and drain on paper towels.

For Broiled Scallops
