Chase's Quesadillas Recipe
A grilled flour tortilla filled with scallions, olives, tomatoes and salsa served with diced lettuce and sour cream.

Prepare the Filling

Chop Vegetables
Chop the scallions and dice the tomatoes into small pieces. Slice the black olives if they are not pre-sliced.

Mix the Filling
In a mixing bowl, combine the chopped scallions, sliced black olives, diced tomatoes, and salsa. Mix well to ensure all ingredients are evenly distributed.
Assemble the Quesadillas

Layer the Ingredients
Take one flour tortilla and spread a portion of the filling mixture (approximately 1/4 cup) on one half of the tortilla. Sprinkle shredded cheese on top of the filling.

Fold and Repeat
Fold the tortilla over to cover the filling and cheese. Repeat this process with the remaining tortillas and filling.
Cook the Quesadillas

Preheat the Pan
Heat a non-stick skillet or griddle over medium heat.

Grill the Quesadillas
Place the folded quesadilla in the heated skillet. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted.

Prepare the Plate
While the quesadillas are cooking, chop the lettuce and prepare the sour cream in a small bowl.

Plate the Quesadillas
Once cooked, remove the quesadillas from the skillet and let them cool for a minute. Cut each quesadilla into wedges and serve on a plate with chopped lettuce and a dollop of sour cream on the side.
