Chicken Cutlet Preparation

Prepare the Chicken
Pound the chicken breasts to an even thickness (about 1/2 inch thick) for even cooking.

Breading Process
Set up a breading station with three shallow dishes: one with flour mixed with salt and pepper, one with beaten eggs, and one with breadcrumbs.

Bread the Chicken
Dredge each chicken breast in flour, shaking off excess, dip in the egg, and then coat with breadcrumbs. Press the breadcrumbs to adhere well.

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until shimmering.

Fry the Chicken
Carefully place the breaded chicken breasts in the hot oil and fry for 5-7 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Mix the Sauce
Once melted, stir in the hot sauce, garlic powder, cayenne pepper, and salt to taste. Mix well and let simmer for 2-3 minutes.

Coat the Chicken
Toss the fried chicken cutlets in the buffalo sauce until evenly coated.

Prepare the Buns
Toast the burger buns lightly if desired.

Assemble the Sandwich
Place a buffalo chicken cutlet on the bottom half of the bun, drizzle with bleu cheese or ranch dressing, and top with lettuce. Cover with the top half of the bun.

Serve immediately with extra buffalo sauce on the side if desired.
