Seafood Stuffing Preparation

Sauté Vegetables
Add the chopped onion and celery. Sauté for 3-4 minutes until softened.

Add Seafood
Stir in the minced garlic, shrimp, and crab meat. Cook for an additional 2-3 minutes until the shrimp turn pink.

Combine Ingredients
Remove from heat and stir in the dried bread crumbs, parsley, lemon juice, salt, and black pepper until well combined.
Cheese Sauce Preparation

Make Roux
Whisk in the flour and cook for 1 minute until the mixture is bubbly.

Thicken Sauce
Gradually whisk in the milk, stirring constantly until the sauce thickens (about 5 minutes).

Add Cheese
Remove from heat and stir in the shredded cheddar cheese, salt, and black pepper until smooth.
Haddock Assembly and Baking

Preheat Oven
Preheat the oven to 375°F (190°C).

Prepare Haddock
Drizzle 1 tablespoon of olive oil over the haddock fillets and season with salt and pepper.

Stuff Haddock
Stuff each haddock fillet with the seafood stuffing mixture.

Assemble Dish
Place the stuffed fillets in a baking dish and pour the cheese sauce over the top.

Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.

Serve warm with lemon wedges on the side.
