Focaccia Bread

Method

Prepare the Focaccia Bread

    Mix Yeast and Water

    In a large bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until foamy.

    Combine Ingredients

    Add the olive oil, salt, all-purpose flour, dried rosemary, and dried oregano to the yeast mixture. Stir until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape and Bake

    Preheat the oven to 400°F (200°C). Once risen, punch down the dough and spread it into a greased baking sheet. Use your fingers to create dimples in the dough. Drizzle with olive oil and sprinkle with additional herbs if desired. Bake for 20-25 minutes until golden.

Assemble the Sandwich

    Prepare the Filling

    In a bowl, combine shredded chicken and Caesar dressing. Mix well until the chicken is evenly coated.

    Layer Ingredients

    Once the focaccia bread is baked and slightly cooled, cut it in half horizontally. On the bottom half, layer the chicken mixture, followed by chopped scallions, sliced tomatoes, and a mixture of provolone, swiss, and cheddar jack cheeses.

    Top and Bake Again

    Cover with the top half of the focaccia bread. Return the sandwich to the oven for an additional 10-15 minutes or until the cheese is melted and bubbly.

    Remove from the oven, let it cool slightly, then cut into individual sandwiches and serve warm.
