Preparation

  1. 1

    Prepare the Marinade

In a bowl, whisk together the olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper until well combined.

  2. 2

    Marinate the King Crab

Place the wild caught king crab legs in a large resealable plastic bag or a shallow dish. Pour half of the marinade over the crab legs, ensuring they are well coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes.

  3. 3

    Prepare the Vegetables

In a separate bowl, combine the bell peppers, zucchini, red onion, and cherry tomatoes. Pour the remaining marinade over the vegetables and toss to coat evenly.

  4. 4

    Marinate the Vegetables

Let the vegetables marinate for at least 20 minutes at room temperature.

Grilling

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 6

    Grill the Vegetables

Place the marinated vegetables on the grill. Cook for about 8-10 minutes, turning occasionally until they are tender and slightly charred.

  3. 7

    Grill the King Crab

Remove the crab legs from the marinade and place them on the grill. Grill for 5-7 minutes, turning occasionally, until heated through and slightly charred.

  4. 8

    Serve

Remove the vegetables and crab from the grill. Serve immediately, garnished with any remaining parsley if desired.
