Prepare the Burger Patties
In a mixing bowl, gently combine the Wagyu beef with salt and black pepper. Form the mixture into two equal-sized patties, about ¾ inch thick.

Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.

Toast the Buns
While the burgers are cooking, slice the pretzel buns in half and toast them lightly on the grill or in a toaster.

Assemble the Burger
On the bottom half of each pretzel bun, layer slices of tomato, arugula, the cooked burger patty, crispy bacon, and a generous drizzle of diner sauce. Top with the other half of the pretzel bun.

Mix the Diner Sauce
In a bowl, combine mayonnaise, ketchup, Dijon mustard, pickle relish, garlic powder, onion powder, salt, and black pepper. Mix well until smooth and creamy.

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin shoestrings, about 1/8 inch thick.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the soaked potatoes and dry them thoroughly with a clean towel. Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels. Season with salt while hot.
