    In a small bowl, mix together salt, black pepper, garlic powder, and chopped rosemary. Rub this seasoning mixture all over the halved chicken, ensuring it is evenly coated.

    Place the seasoned chicken halves into a vacuum-seal bag. Drizzle olive oil over the chicken and seal the bag using a vacuum sealer.

    Preheat the sous vide water bath to 165°F (74°C). Submerge the sealed chicken in the water bath and cook for 2 hours.

    In a large bowl, combine the carrots, potatoes, bell peppers, and onion. Drizzle with olive oil and season with salt, black pepper, and chopped thyme. Toss to coat the vegetables evenly.

    Preheat the oven to 400°F (200°C). Spread the seasoned vegetables on a baking sheet in a single layer. Roast for 25-30 minutes, or until tender and slightly caramelized.
