Preparation of Chimichurri Butter

Make the Chimichurri Butter
In a medium bowl, combine the softened unsalted butter, chopped parsley, chopped cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper.

Mix well
Using a spatula or whisk, mix all the ingredients together until well combined. Taste and adjust seasoning if necessary.

Chill the butter
Transfer the chimichurri butter to a piece of parchment paper or plastic wrap, shape it into a log, and wrap it tightly. Chill in the refrigerator for at least 30 minutes to firm up.
Preparing the Oysters

Prepare the oysters
Using a shucking knife, carefully open the oysters and detach them from the shell. Keep the oyster in its half shell and discard the other half.

Soak the wood chips
Soak the hickory wood chips in water for at least 30 minutes prior to grilling.
Grilling

Preheat the grill
Preheat your grill to medium-high heat (about 400°F/200°C).

Add wood chips
Place the soaked hickory wood chips in a smoker box or wrap them in aluminum foil with holes poked in it, and place it on the grill.

Remove from grill
Carefully remove the oysters from the grill using tongs and place them on a serving platter.
