Roasted Red Pepper Gravy

Grits

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in 1 cup of coarse cornmeal and 1 tsp of salt. Reduce heat to low and cook for about 20-25 minutes, stirring frequently, until thickened.

    Add Cheese and Butter

    Once the grits are cooked, remove from heat and stir in 1 cup of white cheddar cheese and 2 tbs of butter until melted and creamy. Set aside.

Shrimp

    Sauté the Shrimp

    In a large skillet, heat 2 tbs of olive oil over medium-high heat. Add 2 tbs of minced garlic and sauté for about 1 minute until fragrant.

    Cook the Shrimp

    Add 1 lb of peeled and deveined shrimp to the skillet. Sprinkle with 1 tsp of paprika, salt, and black pepper to taste. Sauté for about 3-5 minutes until the shrimp are pink and fully cooked. Remove from heat and set aside.

Roasted Red Pepper Gravy

    Prepare the Gravy

    In the same skillet used for the shrimp, add 1 tbs of olive oil and 1 tbs of minced garlic. Sauté for 1 minute until fragrant.

    Add Peppers and Broth

    Stir in 1 cup of chopped roasted red peppers and 1 cup of chicken broth. Bring to a simmer and cook for about 5 minutes.

    Finish with Cream

    Stir in ¼ cup of heavy cream, salt, and black pepper to taste. Let simmer for an additional 2-3 minutes until slightly thickened.
