Method

Preparation of Seafood

    Prepare Lobster Tails

    Bring a large pot of salted water to a boil. Add the lobster tails and cook for about 8-10 minutes until they are bright red and cooked through. Remove and let cool, then slice down the middle to expose the meat.

    Cook Shrimp

    In the same pot of boiling water, add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove and place in an ice bath to stop cooking. Peel and devein once cooled.

    Prepare King Crab Legs

    If using frozen crab legs, thaw them in the refrigerator overnight. Steam or boil for 5-7 minutes until heated thoroughly. Crack and clean the legs to expose the meat.

    Prepare Oysters and Clams

    Shuck the oysters and clams. Keep them on ice in a platter for serving.

    Make Tuna Poke

    In a bowl, combine the soy sauce, sesame oil, and chopped green onions. Dice the sushi-grade tuna and add it to the mixture. Toss gently to combine, then fold in the diced avocado and sesame seeds.

Assembly and Serving

    Assemble the Seafood Tower

    On a large serving platter or tiered stand, arrange the lobster tails, shrimp, king crab legs, tuna poke, oysters, and clams artistically. Serve with cocktail sauce, mignonette sauce, and lemon wedges on the side.
