Preparing Sushi Rice

Rinse and Cook Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the rice cooker instructions.

Season the Rice
Once the rice is cooked, transfer it to a large bowl. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice, being careful not to mash the grains. Allow the rice to cool to room temperature.
Making Spicy Tuna Mixture

Combine Ingredients
In a medium bowl, mix the diced tuna, mayonnaise, sriracha sauce, sesame oil, and chopped green onions. Stir well to combine, and adjust the sriracha to your desired spice level.
Assembling the Roll

Prepare Nori
Place a bamboo sushi mat on a clean surface and lay one sheet of nori, shiny side down, on the mat.

Spread Rice
Wet your hands with water to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about an inch at the top edge.

Add Spicy Tuna
Spoon a line of the spicy tuna mixture along the center of the rice-covered nori.

Add Hamachi and Serrano
Layer the thinly sliced hamachi on top of the spicy tuna, then add sliced serrano pepper according to your heat preference.

Roll the Sushi
Using the bamboo mat, carefully roll the nori away from you, pressing gently but firmly to keep the filling inside. Once rolled, moisten the top edge of the nori to seal the roll.

Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Drizzle additional sriracha on top if desired and sprinkle sesame seeds for garnish. Serve with soy sauce and wasabi.
