Preparing the Salmon

Season the Salmon
Drizzle the Ora King salmon fillets with olive oil and season them generously with salt and black pepper on both sides.

Making Citrus Shallot Butter

Melt the Butter
In a small saucepan over medium heat, melt the unsalted butter until it is foamy.

Add Shallots
Add the chopped shallots to the melted butter and sauté for about 2-3 minutes until they become translucent.

Add Juices and Parsley
Stir in the fresh lemon juice, orange juice, and chopped parsley. Let the mixture simmer for an additional minute, then remove from heat.
Preparing the Vegetable Harvest

Prepare the Vegetables
In a pot of boiling salted water, blanch the trimmed asparagus and baby carrots for about 3-4 minutes until tender-crisp. Add the halved cherry tomatoes in the last minute of cooking.

Drain and Serve
Drain the vegetables and transfer them to a serving platter. Drizzle with a little olive oil and season with salt and pepper if desired.
