    In a large bowl, combine 2 cups of all-purpose flour, 1 cup of cornmeal, 1 tablespoon of baking powder, and 1 teaspoon of salt. Mix well until evenly combined.

    Stir in 1 cup of shredded cheddar cheese. In another bowl, whisk together 1.5 cups of milk, 2 large eggs, and 0.5 cups of melted unsalted butter. Gradually add the wet ingredients to the dry ingredients and mix until just combined.

    Cook the Waffles

    Preheat your waffle iron and spray with non-stick cooking spray. Pour the batter into the waffle iron according to the manufacturer’s instructions and cook until golden brown. Repeat until all batter is used.

    Marinate the Chicken

    In a large bowl, pour 2 cups of buttermilk over 4 pieces of chicken breasts. Cover and refrigerate for at least 1 hour or overnight for best results.

    In a separate bowl, mix 1.5 cups of all-purpose flour, 1 tablespoon of paprika, 1 tablespoon of garlic powder, 1 tablespoon of onion powder, 1 teaspoon of salt, and 1 teaspoon of black pepper.

    Remove chicken from buttermilk and let excess drip off. Dredge the chicken in the flour mixture, pressing firmly to adhere. In a large skillet, heat 2 cups of vegetable oil over medium-high heat. Fry the chicken for about 5-7 minutes on each side or until golden brown and cooked through. Drain on paper towels.

    Fill a large saucepan with water and add 1 tablespoon of vinegar. Bring to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the simmering water. Poach for about 3-4 minutes for a runny yolk. Remove with a slotted spoon and set aside.

Honey Butter

    In a mixing bowl, combine 0.5 cups of softened unsalted butter, 0.25 cups of honey, and 0.5 teaspoons of cinnamon. Mix until smooth and creamy.

    On a plate, stack a cheddar waffle, top with a piece of country fried chicken, a poached egg, and drizzle with warm maple syrup. Serve with a dollop of honey butter on the side.
