King Salmon + Heirloom Tomatoes Recipe

Preparation of Ingredients

    Chop the Vegetables

    Dice the heirloom tomatoes, red bell pepper, green bell pepper, and red onion into small pieces. Set aside.

    Prepare the Sweet Corn

    If using fresh corn, shuck the corn and remove the kernels from the cob. If using frozen corn, thaw it and measure out 2 cups.

    Make the Basil Oil

    In a blender, combine fresh basil leaves, olive oil, garlic cloves, salt, and black pepper. Blend until smooth and set aside.

Cooking

    Cook the Salmon

    Preheat a skillet over medium-high heat. Season the king salmon fillets with salt and pepper. Add a bit of olive oil to the skillet and place the salmon skin-side down. Cook for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

    Prepare the Succotash

    In a large skillet, add a tablespoon of olive oil over medium heat. Add the red onion and sauté until translucent. Add the diced red and green bell peppers and cook for another 3-4 minutes. Finally, stir in the sweet corn and cook for an additional 5-7 minutes, until heated through. Add the diced heirloom tomatoes and gently mix in.

    Plate the Dish

    On serving plates, create a bed of sweet corn succotash. Place the cooked king salmon on top of the succotash. Drizzle the basil oil over the salmon and succotash.
