Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Potatoes
Wash and halve the fingerling potatoes. Toss them in 2 tablespoons of olive oil, salt, and pepper. Spread them on a baking sheet in a single layer.

Caramelize Onions
In a skillet over medium heat, add 1 tablespoon of olive oil. Slice the onions and add them to the skillet. Cook slowly until they turn golden brown, about 15-20 minutes, stirring occasionally.

Prepare Chicken
Season the airline chicken breasts with salt, pepper, chopped rosemary, and thyme. Rub 1 tablespoon of olive oil onto each breast.

Sear the Chicken
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken breasts skin-side down and sear for about 4-5 minutes until golden brown. Flip and sear for an additional 3-4 minutes.

Combine Ingredients
Transfer the seared chicken to the baking sheet with the fingerling potatoes. Add the caramelized onions, chopped roasted red peppers, minced garlic, Kalamata olives, and capers on top of the chicken.

Roast in the Oven
Place the baking sheet in the preheated oven and roast for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Serve
Remove from the oven, let it rest for 5 minutes, then serve warm, garnished with additional fresh herbs if desired.
