Method

Preparing Grilled Vegetables

    Marinate the Vegetables

    In a bowl, combine chopped bell peppers, sliced zucchini, sliced red onion, minced garlic, balsamic vinegar, dried oregano, and 1 tablespoon of olive oil. Mix well to coat the vegetables evenly. Allow them to marinate for at least 15 minutes.

    Grill the Vegetables

    Preheat a grill pan over medium-high heat. Once hot, add the marinated vegetables and cook for 8-10 minutes, stirring occasionally until they are tender and slightly charred. Remove from heat and set aside.

Cooking Turkey Bacon

    Cook the Turkey Bacon

    In a skillet over medium heat, add the turkey bacon slices. Cook for 5-7 minutes, flipping occasionally, until crispy. Remove from the skillet and place on a paper towel to drain.

Making the Omelet

    Prepare the Egg Whites

    In a bowl, whisk together the egg whites, salt, and black pepper until well combined.

    Cook the Omelet

    In the same skillet used for the turkey bacon, add 1 tablespoon of olive oil and heat over medium-low heat. Pour the egg white mixture into the skillet and cook for about 2-3 minutes, or until the edges begin to set.

    Add Vegetables

    Once the edges are set, add the grilled vegetables evenly over one half of the omelet. Fold the other half over the vegetables and cook for an additional 1-2 minutes until the egg whites are fully cooked.

    Carefully slide the omelet onto a plate. Serve with crispy turkey bacon on the side.
