Preparing the Tempura Batter

    Mix Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt until well combined.

    Add Water

    Gradually add the ice-cold water to the dry mixture while stirring gently. Do not overmix; a few lumps are fine. Set aside.

Preparing the Filling

    Prepare Shrimp

    Heat a pot with vegetable oil over medium-high heat. Once hot, lightly season the shrimp with salt and fry until golden, about 2-3 minutes. Remove and drain on paper towels.

    Prepare Vegetables

    Slice the avocado and cucumber into thin strips. Set aside.

Assembling the Tempura Roll

    Layer Ingredients

    On a bamboo sushi mat, lay one nori sheet shiny side down. Spread 1/2 cup of sushi rice evenly over the nori, leaving a small border at the top.

    Add Fillings

    Place the fried shrimp, avocado slices, and cucumber strips on top of the rice. Drizzle with spicy mayo to taste.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi tightly from the bottom to the top, pressing gently to form a roll. Seal the edge of the nori with a little water.

Frying the Roll

    Prepare Oil

    In a deep pot, heat the vegetable oil to 350°F (175°C).

    Coat and Fry

    Dip the sushi roll into the tempura batter, allowing excess to drip off, then gently place it in the hot oil. Fry until golden and crispy, about 2-3 minutes on each side.

    Drain and Slice

    Remove the tempura roll from the oil and drain on paper towels. Allow to cool slightly before slicing into bite-sized pieces.
