Preparing Crispy Rice

    Rinse and Cook Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions.

    Season Rice

    Once the rice is cooked, transfer it to a large bowl. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold to combine. Let cool to room temperature.

    Form and Fry Rice

    Once the rice has cooled, line a baking dish with parchment paper and spread the rice evenly, pressing down firmly to compact it. Refrigerate for about 30 minutes. Cut the set rice into squares or rectangles. In a large skillet, heat vegetable oil over medium-high heat. Fry the rice pieces until golden and crispy on both sides, about 2-3 minutes per side. Drain on paper towels.

Making Spicy Tuna Mixture

    Combine Ingredients

    In a medium bowl, combine the diced tuna, mayonnaise, Sriracha sauce, sesame oil, green onions, diced jalapeños, and salt. Mix well until the tuna is evenly coated with the spicy sauce.

Assembling the Dish

    Place a spoonful of the spicy tuna mixture on each crispy rice piece. Top with a slice of avocado, a sprinkle of sesame seeds, and additional jalapeños for garnish. Serve immediately.
