Crab and Toppings Preparation

    In a pot of boiling salted water, blanch the asparagus spears for 2-3 minutes until bright green and tender-crisp. Remove and plunge into ice water to stop cooking. Drain and set aside.

    In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped shallots and sliced mushrooms, cooking until softened, about 4-5 minutes. Season with salt and black pepper. Remove from heat and set aside.
