Crab Cakes

    Prepare the Crab Mixture

    In a large bowl, combine crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, and the egg. Mix gently to avoid breaking up the crab meat.

    Add Breadcrumbs and Seasonings

    Fold in the breadcrumbs, chopped green onions, salt, and black pepper to taste. Mix until everything is well combined.

    Form the Cakes

    Shape the mixture into patties, about 3 inches in diameter. Place them on a parchment-lined baking sheet.

    Chill the Cakes

    Refrigerate the crab cakes for at least 30 minutes to firm up.

    Cook the Crab Cakes

    In a skillet, heat oil over medium heat. Cook the crab cakes for 4-5 minutes on each side until golden brown.

Remoulade Sauce

    Mix the Sauce

    In a small bowl, whisk together mayonnaise, Dijon mustard, capers, lemon juice, and hot sauce to taste until smooth. Adjust seasoning as desired.

    Slice the kaiser rolls in half and lightly toast them if desired.

    Spread a generous amount of remoulade sauce on the bottom half of each roll. Place a piece of lettuce on top, followed by a crab cake, and then add tomato slices.

    Drizzle additional remoulade sauce over the tomato, then close the sandwich with the top half of the roll.
