    In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, and salt until well combined.

    In another bowl, whisk together the buttermilk, eggs, melted butter, and honey until smooth.

    Combine Ingredients

    Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix. Let the batter rest for 10 minutes.

    Cook Cakes

    Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter onto the skillet for each cake. Cook until bubbles form on the surface, about 3-4 minutes, then flip and cook for another 2-3 minutes until golden brown.

    In a large saucepan, combine the diced apples, sugar, lemon juice, cinnamon, and water. Bring to a boil over medium-high heat.
