Prepare Dry Ingredients
In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, and salt until well combined.

Mix Wet Ingredients
In another bowl, whisk together the buttermilk, eggs, melted butter, and honey until smooth.

Combine Ingredients
Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix. Let the batter rest for 10 minutes.

Cook Cakes
Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter onto the skillet for each cake. Cook until bubbles form on the surface, about 3-4 minutes, then flip and cook for another 2-3 minutes until golden brown.

Simmer Jam
Reduce the heat and let it simmer for about 30 minutes, stirring occasionally, until the apples are soft and the mixture thickens.

Remove from heat and let the jam cool before transferring it to a jar for storage.
Salted Caramel Warm Maple Syrup

Make Caramel
In a medium saucepan over medium heat, melt the granulated sugar until it turns a deep amber color, swirling the pan occasionally.

Add Butter and Cream
Add the butter and stir until melted, then slowly whisk in the heavy cream. Be cautious, as it may bubble up.

Stir in the sea salt and maple syrup. Heat gently until warm, then remove from heat.
