Salad Preparation

    Prepare the Lettuce

    Wash the romaine lettuce heads under cold water. Tear the leaves into bite-sized pieces and place them in a large mixing bowl.

    Make the Dressing

    In a small bowl, whisk together olive oil, lemon juice, minced garlic, Worcestershire sauce, Dijon mustard, salt, and black pepper until well combined.

    Combine Ingredients

    Add the croutons and half of the parmesan cheese to the bowl with the romaine lettuce. Pour the dressing over the salad and toss gently to combine.

    Add Sweet Peppers

    Slice the sweet bell peppers into rings and scatter them over the top of the salad. Reserve a few rings for garnish.

    Final Touch

    Sprinkle the remaining parmesan cheese on top of the salad and garnish with reserved sweet pepper rings.

Achiote Marinade Preparation

    Prepare the Marinade

    In a small bowl, combine achiote paste, orange juice, minced garlic, cumin, and salt. Mix until you achieve a smooth consistency.

    Marinate

    Use this marinade to coat grilled chicken or shrimp if desired, allowing it to marinate for at least 30 minutes before cooking.
