Prepare Bone Marrow Butter

Roast the Bone Marrow
Preheat your oven to 450°F (230°C). Place the bone marrow pieces upright on a baking sheet. Roast in the oven for about 15-20 minutes, or until the marrow is soft and starting to bubble.

Melt Butter
While the marrow is roasting, in a small saucepan over medium heat, melt the unsalted butter. Add the minced garlic and fresh rosemary, cooking for 2-3 minutes until fragrant. Remove from heat.

Once the marrow is done roasting, remove it from the oven and let it cool slightly. Scoop the marrow into a mixing bowl. Pour the melted butter mixture over the marrow and add sea salt and black pepper. Mix until well combined.

Slice the crusty bread into thick slices. You can toast them lightly if desired.
