Bone Marrow Butter

To Serve

Method

Prepare Bone Marrow Butter

  1. 1

    Roast the Bone Marrow

Preheat your oven to 450°F (230°C). Place the bone marrow pieces upright on a baking sheet. Roast in the oven for about 15-20 minutes, or until the marrow is soft and starting to bubble.

  2. 2

    Melt Butter

While the marrow is roasting, in a small saucepan over medium heat, melt the unsalted butter. Add the minced garlic and fresh rosemary, cooking for 2-3 minutes until fragrant. Remove from heat.

  3. 3

    Combine Ingredients

Once the marrow is done roasting, remove it from the oven and let it cool slightly. Scoop the marrow into a mixing bowl. Pour the melted butter mixture over the marrow and add sea salt and black pepper. Mix until well combined.

To Serve

  1. 4

    Prepare the Bread

Slice the crusty bread into thick slices. You can toast them lightly if desired.

  2. 5

    Spoon the Bone Marrow Butter

Spoon the bone marrow butter onto the sliced bread. Make sure to get a good amount of the mixture for maximum flavor.

  3. 6

    Garnish and Serve

Garnish with chopped fresh parsley and serve with lemon wedges on the side. Squeeze lemon over the buttered bread just before eating for added brightness.
