    Prepare the Marinade

    In a bowl, whisk together olive oil, minced garlic, lemon juice, paprika, salt, and black pepper.

    Marinate the Lobster

    Place the lobster tails in a resealable plastic bag or shallow dish. Pour the marinade over the lobster tails, making sure they are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes.

    Preheat the Grill

    While the lobster is marinating, preheat your grill to medium-high heat.

    Grill the Lobster Tails

    Remove the lobster tails from the marinade and place them on the grill, cut-side down. Grill for about 5-6 minutes, then flip and grill for another 4-5 minutes until the meat is opaque and cooked through.

    Wash and chop the bell peppers, zucchini, red onion, and eggplant into bite-sized pieces.

    In a separate bowl, combine olive oil, balsamic vinegar, dried oregano, salt, and black pepper. Mix well.

    Add the chopped vegetables to the marinade and toss until they are well coated. Let them sit for about 15-20 minutes.
