Sushi Rice

Method

Prepare Sushi Rice

  1. 1

    Rinse and Cook Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or saucepan. If using a saucepan, bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the water is absorbed.

  2. 2

    Season the Rice

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl. Pour the vinegar mixture over the rice and gently fold it in. Allow the rice to cool to room temperature.

Prepare Ahi Tuna Poke

  1. 3

    Mix Tuna Ingredients

In a medium bowl, combine the diced ahi tuna, soy sauce, sesame oil, chopped green onions, and sesame seeds. Toss gently to coat the tuna evenly. Let it marinate for about 10 minutes while you prepare the other ingredients.

Prepare Vegetables

  1. 4

    Prep Vegetables

Julienne the carrots, slice the avocado, cucumber, and radish. If the edamame is not spiced, season it with salt or chili flakes to taste. Rehydrate the wakame seaweed according to package instructions, usually by soaking it in water for 10-15 minutes.

Assemble the Poke Bowl

  1. 5

    Layer Ingredients

In a bowl, place a serving of sushi rice at the bottom. Top with a generous amount of the marinated ahi tuna, followed by the julienned carrots, sliced avocado, spiced edamame, sliced cucumber, radish, pickled onion, pickled daikon, and wakame.

  2. 6

    Serve

Garnish with additional sesame seeds and green onions if desired. Serve immediately and enjoy your Ahi Tuna Poke!
